Avocado shrimp salad

So this isn’t something I made myself, but oh man, it was so good, I just had to share!!! It would be tragic not to. I present to you the most delicious salad ever!! Avocado shrimp salad! This is going to be a short post because it’s so easy, but I feel like I’m sharing a true gem here! You’re welcome!

All you do is have a small bed of greens on a plate, then pile on a thinly sliced avocado half, a generous scoop of cooked shrimp (you know those mini ones), some chopped campari tomatoes, and a bit of basil… Then drizzle on a sweet honey mustard dressing. So make a normal honey mustard dressing, but add more honey than you usually would. And OMG it was amazeballs!!! The flavours just go together soooo well! I ate this as an appetizer before having Arctic char fillets served with a yogurt tahini sauce that I made, and I actually would have been more than happy with just the salad alone for dinner. This may have to do with the fact that the Arctic char recipe slightly sucked (I refuse to blog about it because I consider it a sad fail).
