Berry crisp

I’ve always made apple crumbles, but it’s more of a fall thing, and now that it’s summer, I decided to make a berry crumble/crisp instead. In fact, making a berry crisp was easier than the apple one because I didn’t have to peel a ton of apples and stew them in cinnamon before putting them in the dish with the topping.

First, make the crumble. Mix flour, brown sugar, oats, cinnamon, and nutmeg together. Then cut in cold butter. I chopped my butter into little pieces before crumbling them into the mixture. In hindsight, I probably should have crumbled the butter into the flour alone first, and then added the rest of the ingredients. Also, the recipe calls for a LOT of crumble topping. You could halve it and have more than enough. I ended up tossing a lot out. I felt bad about wasting so much ingredient that I actually picked through the mixture to find and keep the bits of butter before throwing the rest out! Sooo either halve the topping, or increase the amount of berries.

Mix the frozen berries with a few tablespoons of sugar.

Put a thin layer of topping into your baking dish (I used a pie dish) and then all the berries. Cover with the rest of the crumble topping. I usually don’t use a bottom layer of crumble, but I think I’ll start doing this in the future since I think it absorbs the extra moisture from the fruit and prevents the dessert from being soggy. Bake for 40min, or forget about it in the oven for 50min like I did, because I got distracted playing the new “Plague Inc” app on my ipad. Serve with vanilla ice cream!
