Christmas turkey


Oh my god. Can we talk about Christmas dinner please? It was awesomeballs. I’m usually not in Canada for Christmas, since I go home to Mauritius where it’s all tropical and summery, and so I don’t usually get too into the spirit of things. But this year was different! My brother came to visit me in Vancouver, and so I had to figure this Christmas thing out, and do it right! I had so many questions. When do I put up the Christmas tree? Who do I buy gifts for? Everyone I know? Only the closest people? Is Christmas dinner on the 24th or 25th? What do people usually make? (I figured out that it was more or less a Thanksgiving repeat!) Can you pour rum in the eggnog? Soooo many questions. But people, I figured it out! And Christmas this year was pretty fun 🙂 Specially with all the cooking.

I’m always a big fan of epic meals, and something like a roast Christmas turkey is not hard to make at all, nor are the sides, but I think what scares people is the timing of it all, and the fact that many people will be eating (judging) your food. This year, most of my friends were away visiting family, so we made a cozy meal for 3. Me, brother, and boyfriend. Now, I would never shy away from cooking an epic meal since I love hosting and stuffing my loved ones full of yummy food, but boy was I spoilt this year! My two men cooked me an amazing turkey and took over the whole kitchen, so I perched atop a bar stool and sipped my wine, watching them! They did let me make the sides though, and so I made some brown sugar glazed carrots, and garlic green beans. We had the turkey with mashed potatoes and loads of gravy. Oh, I should mention that there was some last minute panicking over the grocery stores being all out of turkeys on the 24th! It was a bit of a spontaneous meal, and boyfriend insisted on getting a good quality hormone-free turkey that hadn’t been brined, and absolutely no butterballs. And so, being a resourceful sort of woman, I decided that of all the places in Vancouver that wouldn’t be out of turkeys, Richmond would be it. So we made the venture to the Asian market, T&T, deep in Richmond, and lo and behold, my people were busy buying seafood, chicken feet, beef, pork ribs, and everyone was ignoring the freezer FULL of turkeys. Success!!!!

Here’s how we made the turkey:

For a 10lb defrosted turkey, we placed it in a roasting pan, on a bed of sliced white onions. We rubbed it generously with olive oil, salt, and pepper. Simple is best. We stuffed it with pieces of baguette, mashed potatoes, sage, thyme, and rosemary. Yes, I know this stuffing sounds very odd, but trust me, it tasted really really good, and despite my brother’s eyebrow raise at the stuffing of turkey with potatoes, he ended up loving the stuffing. We cooked it at 350F for 2hrs. Too easy? It was sooo easy! And it came out moist, and fragrant, and just very good.


Right when the turkey was about to be done, I fried up some garlic, threw in some green beans, tossed around, and steamed with 3Tb of water for 2min. Then it was done! For the brown-sugar glazed carrots, I melted some butter in a pan, added sliced carrots and a tablespoon of brown sugar, and tossed it around till cooked. Boyfriend also made a zucchini/tomato casserole that was amazing. Slice up tomatoes, add zucchini slices on top, plenty of basil, top with grated mozzarella, drizzle with some olive oil, and grill.



Anyway, the combination of good food and good company made me a very happy girl! And that’s what Christmas is all about right?! Food and love!!!
