Scallops with white beans and bacon

If you read my baked eggs post, you would have seen that I had a bacon craving in the morning. I used the leftover bacon in my dinner! Not only was this meal really fast (around 15min), but it’s also easy, requires very little prep work, and I’d like to think that it’s “nutritious” by being high-protein and high-fiber while being low-carb. I doubt that it’s low-calorie though!

First, I fried up the bacon till crispy. Resist the temptation to eat the bacon strips before the rest of the meal is done. Therefore, place bacon far out of sight.

Use the bacon grease to cook some chopped onions and garlic until soft. No, this is not the healthiest thing to do, but it tasted gooood. You can always omit the bacon from this recipe and use olive oil instead. Then, add in a can of white beans, and some baby spinach. Lastly add some squeezed lemon juice and season.

Pat your scallops dry, season both sides, and sear in a separate pan in some butter. About 2-3min for each side is sufficient.

Then, plate the scallops and white beans, chop up the bacon strip and crumble over top. Garnish with lemon slices if you’d like.
