I apologize if I’ve been a bit slow on posting stuff lately! The holidays were pretty crazy, many epic meals were made, but not always by me, and there was a ton of eating out too. So I haven’t had a lot of time to organize myself in the kitchen. It actually takes me a long time to think of something different and good to make for dinner, and I also have to make sure that my dining companion likes the food too! I will eat pretty much anything, but many of the people who are close to me have dietary restrictions, either because of health preferences, genuine allergies, or religion. In my group of close people include a pescetarian, a couple who doesn’t eat beef, a gluten-free and dairy-free friend, one who is severely allergic to eggs, and one very picky anti-cheese, meat-and-potatoes type of friend. Whew! And then there’s the timing of it all. I like timing my dinners so that it’s all prepped, and almost ready by the time my dinner guests arrive. That way, I can spend time with my close ones, and minimal time cooking. But now that the holidays are over, I promise I’ll be cooking more! Stay tuned for more recipes 🙂 In the meanwhile, here’s a simple but very satisfying and healthy salad!
So I decided to make use of the copious amounts of smoked salmon that I had bought at Costco to make smoked salmon salad! Note to self… If you’re not living as part of large family, shopping for food at Costco can be a race against time to eat it all before it goes bad! Except if I buy cheese. Because then I have absolutely no problem finishing that off! Anyway, so I had bought a massive pack of smoked salmon and about a dozen avocados. This recipe is so simple, it’s ridiculous.
Chop up some romaine lettuce, top with some cherry tomatoes, slices of smoked salmon, and avocado. Drizzle with your favourite vinaigrette. I used a mixture of olive oil, red wine vinegar, and a teensy bit of soy sauce. Grind some pepper over your whole salad. I didn’t have any goat cheese, but if I did, I would have crumbled some in there too for extra deliciousness.
